Ingredients:
- 3 washed tomatoes, quartered then halved
- 2 ripened avocados, peeled and chopped
- 1 large cucumber, sliced in half longwise, then chopped
- 2 tablespoons balsamic vinegar
- fresh ground black pepper to taste
- optional: juice of 1 lemon
Directions:
- Place chopped tomatoes, avocados, cucumber in a salad bowl.
- Sprinkle with balsamic vinegar and lemon juice, then lightly mix with tongs.
- Add fresh ground black pepper on top, and serve. Let me know if you are going to try it! It's super easy, and OH SO HEALTHY!
You had me at avocado. This looks fantastic. I forget that salads don't necessarily have to include lots of leafy greens. Yum :)

DeleteVery YUMMY! I only used 1 tablespoon of balsamic vinegar just because I am not a big fan of it but it was still really good! My 7 & 2 year old boys loved it too!

DeleteI really like balsamic so two tablespoons won't be enough for me. Just starting to eat avacodos so I am definitely giving this a try.

ReplyDeleteThis is my all-time favorite go to snack. Love it sooooo much! I eat it at least twice a week. I swear I am always buying more avocados. :) I leave out the cucumbers however. It just seems to make it too watery. It also works with grape/cherry tomatoes if that's all you have at the time.

DeleteAlthough I am not quite sure if water with lemon and cucumber is a good idea but can give it a try. After all individually all three are quite healthy for our body.
